- 1½ cups graham-cracker crumbs
- ¼ cup granulated sugar
- ⅓ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup sour cream
- ⅓ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 medium apples, peeled and sliced
- ¼ cup light brown sugar
- 1 tsp ground cinnamon
- ¼ cup rolled oats
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham-cracker crumbs, granulated sugar, and melted butter until it resembles wet sand. Press into a greased 9-inch springform pan.
- For the filling, beat cream cheese until smooth, then add brown sugar, followed by sour cream, vanilla extract, and eggs one at a time.
- Pour filling over the crust. Toss sliced apples with light brown sugar and cinnamon; layer over the cheesecake batter.
- Bake for 35–40 minutes until edges are set; center should jiggle slightly.
- Let cool in the oven with the door cracked for an hour before refrigerating for at least four hours or overnight.
- For the crumble topping, mix rolled oats with melted butter and sprinkle over cooled cheesecake; bake again at 375°F (190°C) for 12–15 minutes until golden.
- Slice and serve warm or at room temperature.
