  • ½ cup sour cream
  • ⅓ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium apples, peeled and sliced
  • ¼ cup light brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup rolled oats

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham-cracker crumbs, granulated sugar, and melted butter until it resembles wet sand. Press into a greased 9-inch springform pan.
  3. For the filling, beat cream cheese until smooth, then add brown sugar, followed by sour cream, vanilla extract, and eggs one at a time.
  4. Pour filling over the crust. Toss sliced apples with light brown sugar and cinnamon; layer over the cheesecake batter.
  5. Bake for 35–40 minutes until edges are set; center should jiggle slightly.
  6. Let cool in the oven with the door cracked for an hour before refrigerating for at least four hours or overnight.
  7. For the crumble topping, mix rolled oats with melted butter and sprinkle over cooled cheesecake; bake again at 375°F (190°C) for 12–15 minutes until golden.
  8. Slice and serve warm or at room temperature.
