  • 6 whole scallions (thinly sliced)
  • 16 ounces frozen corn kernels (or 3 cups fresh)
  • 1 teaspoon Tajin or seasoning blend
  • 4 ounces reduced-fat cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese (grated)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F.
  2. In an ovenproof skillet, heat olive oil over medium heat. Sauté white and light-green parts of scallions with salt until softened (2-3 minutes).
  3. Add corn and seasoning; sauté until corn softens (3-5 minutes).
  4. Remove from heat, fold in cream cheese, sour cream, and three-quarters of Cotija cheese until creamy.
  5. Bake for 10-12 minutes until bubbling.
  6. Broil for 2-3 minutes, adding remaining Cotija on top until golden brown.
  7. Garnish with reserved scallion greens and cilantro before serving.
