Ingredients
- 1 teaspoon extra virgin olive oil
- 6 whole scallions (thinly sliced)
- 16 ounces frozen corn kernels (or 3 cups fresh)
- 1 teaspoon Tajin or seasoning blend
- 4 ounces reduced-fat cream cheese
- ¼ cup light sour cream
- 7 ounces Cotija cheese (grated)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F.
- In an ovenproof skillet, heat olive oil over medium heat. Sauté white and light-green parts of scallions with salt until softened (2-3 minutes).
- Add corn and seasoning; sauté until corn softens (3-5 minutes).
- Remove from heat, fold in cream cheese, sour cream, and three-quarters of Cotija cheese until creamy.
- Bake for 10-12 minutes until bubbling.
- Broil for 2-3 minutes, adding remaining Cotija on top until golden brown.
- Garnish with reserved scallion greens and cilantro before serving.
