- 2 pounds baby potatoes, halved

Instructions
- Boil the Potatoes: Place halved baby potatoes in a large pot with cold water and a pinch of salt. Bring to a boil over medium-high heat. Reduce heat and simmer until fork-tender (about 15-20 minutes). Drain and let cool.
- Prepare the Dressing: In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper until smooth.
- Combine Ingredients: In a large mixing bowl, mix cooled potatoes with red onion and cherry tomatoes. Pour dressing over and gently toss until evenly coated.
- Add Fresh Herbs: Fold in parsley and basil for freshness. Adjust seasoning as desired.
