  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • 1 Tablespoon olive oil (for sweet potatoes)
  • 1 Tablespoon olive oil (for broccoli)
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" chunks and cut onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a lined sheet pan. Bake for 20 minutes.
  3. After 20 minutes, toss sweet potatoes and add broccoli florets tossed with olive oil and salt to the pan. Place chicken breasts brushed with BBQ sauce on the other side of the pan.
  4. Bake for an additional 15-20 minutes until everything is cooked through. Shred the chicken using two forks and mix it with remaining BBQ sauce before serving.
