- 1–2 lbs. fresh salmon
- 2 tablespoons brown sugar
- 2 teaspoons smoked paprika
- 2 mangoes, diced
- 1 avocado, diced
- 1 1/2 cups rice
Instructions
- Prepare the salsa by mixing diced mangoes, avocado, cilantro, red onion, jalapeño (if using), honey, lime juice, and zest in a bowl. Toss gently to combine.
- Cook rice according to package directions.
- Preheat the oven to 475°F (or broil at 500°F). Mix brown sugar, paprika, onion powder, garlic powder, chili powder, salt, and olive oil into a paste.
- Place salmon skin-side down on a baking sheet lined with foil and rub the spice mixture all over.
- Bake for about 6-12 minutes until cooked through.
- Assemble your bowls: scoop rice into bowls, flake salmon on top, and add salsa generously.
