- 1 lb boneless skinless chicken breasts
- 6 oz fresh blackberries + more for serving
- 3 tbsp balsamic vinegar
- 1/4 cup olive oil
- 2 tsp honey
- 1 tsp dijon mustard
- 1 fresh or dried thyme
- 1/2 tsp salt
- 2 cups basil, torn
- 4 cups arugula
- 1 ripe avocado, pitted and sliced
- Toasted pumpkin seeds for serving (optional)
Instructions
- Prepare the marinade by blending blackberries with balsamic vinegar, olive oil, honey, Dijon mustard, salt, and thyme until smooth. Strain to remove seeds.
- Marinate the chicken in two-thirds of the blackberry mixture for at least 30 minutes.
- Preheat your grill to medium heat and cook the marinated chicken for 20-25 minutes until it reaches 165°F internally.
- Assemble your salad by layering arugula and torn basil in bowls, adding sliced grilled chicken, avocado, and fresh blackberries.
- Drizzle with reserved blackberry dressing before serving.
