- 3 1/2 cups blackberries (fresh or frozen)
- 1/2 cup granulated sugar
- 2 1/2 tablespoons cornstarch
- 1/4 cup warm water
- 2 1/4 teaspoons active dry yeast
- 1 teaspoon granulated sugar
- 1/4 cup instant vanilla pudding mix
- 1 cup warm milk
- 1/3 cup melted unsalted butter
- 1 tablespoon Greek yogurt
- 1 egg
- 1/2 teaspoon salt
- 3 to 3 1/4 cups all-purpose flour
- 5 tablespoons salted butter (softened)
- 2/3 cup brown sugar
- 2 1/2 teaspoons cinnamon
- 5 ounces cream cheese
- 5 tablespoons unsalted butter (softened)
- 1 tablespoon corn syrup
- 2 teaspoons vanilla
- 1/8 teaspoon salt
- 2 cups powdered sugar
- 1/4 cup blackberry filling (reserved from filling)
Instructions
- In a saucepan, combine blackberries, sugar, cornstarch, and warm water. Cook over medium heat until thickened.
- Activate yeast by mixing it with warm water and sugar; let sit until frothy.
- In a bowl, combine warm milk, melted butter, Greek yogurt, egg, salt, and activated yeast mixture. Gradually add flour until a soft dough forms.
- Knead the dough on a floured surface until smooth. Allow it to rise for about an hour.
- Roll the dough into a rectangle and spread softened butter over it. Sprinkle brown sugar and cinnamon on top before drizzling with blackberry filling.
- Roll up the dough tightly and slice into pieces. Place in a greased baking dish to rise again.
- Bake at 350°F (175°C) for approximately 25 minutes until golden brown.
- For the frosting, beat together cream cheese, softened butter, corn syrup, vanilla, salt, and powdered sugar until creamy.
