Ingredients
- 3 cups fresh spinach
- 1/2 cup chopped pecans
- 1/2 cup dried cranberries (low/no sugar)
- 1/2 cup plant-based cheese (or feta)
- 1/2 cup fresh blueberries
- 1 tbsp olive oil
- 1 tbsp water
- 3 tbsp honey
- 2 tbsp balsamic vinegar
Instructions
- In a large bowl, toss the spinach, pecans, cranberries, plant-based cheese, and blueberries until well mixed.
- For the dressing, combine olive oil, water, honey, and balsamic vinegar in a mason jar. Seal and shake vigorously until well blended.
- Drizzle the dressing over the salad just before serving to maintain freshness.
