  • 2 heads broccoli (about 1 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1011 strips cooked turkey bacon
  • Miracle Whip or mayonnaise
  • lemon zest
  • lemon juice
  • white grape juice vinegar
  • sugar
  • kosher salt
  • black pepper
  • dry mustard
  • cayenne pepper

Instructions

  1. Cook the turkey bacon in the oven until crispy. Let it cool and chop into bits.
  2. In a large bowl, whisk together Miracle Whip or mayonnaise with lemon zest, lemon juice, white grape juice vinegar, sugar, salt, pepper, dry mustard, and cayenne pepper until smooth.
  3. Chop broccoli into small florets and add to the dressing along with cranberries, sunflower seeds, cheddar cheese, red onion, and most of the turkey bacon.
  4. Mix well to combine all ingredients. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
