- 1 tbsp apple cider vinegar
- 3 cups fresh sliced peaches
- 3 cups fresh strawberries (hulled and quartered)
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
- Turbinado sugar (optional)
Instructions
- Prepare the Brown Butter: Melt butter in a saucepan over medium heat, stirring until golden brown and nutty. Allow to cool slightly.
- Make the Crust Dough: In a bowl, mix flour and sea salt. Add browned butter, water, and vinegar; combine gently. Wrap in plastic wrap and chill.
- Prepare the Filling: Combine peaches, strawberries, sugar, cornstarch, lemon juice, and salt in a bowl; let sit for about 10 minutes.
- Assemble the Pie: Roll out chilled dough; place one layer in a pie dish. Fill with fruit mixture and sprinkle Turbinado sugar if desired. Cover with another dough layer or lattice design.
- Bake: Preheat oven to 350°F (175°C) and bake for about 70 minutes or until bubbly and golden brown.
