  • Total Time: 32 minutes
  • Yield: Approximately 24 cookies 1x

Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1 1/2 cups granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons chai spice blend (cinnamon, cardamom, ginger, cloves, allspice)
  • For coating: 1/4 cup granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cream of tartar, baking soda, salt, and chai spice blend.
  3. In a large bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in eggs one at a time followed by the vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet ingredients until just combined; avoid overmixing.
  6. Chill the dough for at least 1 hour in the refrigerator.
  7. Roll chilled dough into 1-inch balls; coat each ball in the cinnamon-sugar mixture.
  8. Place on prepared baking sheets about 2 inches apart and bake for 10-12 minutes until edges are golden but centers are soft.
  9. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
