Ingredients
- 1 (12.5 oz) can of chicken (drained)
- 4 cups frozen cauliflower rice (cooked)
- 1 (8 oz) package of cream cheese
- ¾ cup mayonnaise
- 2 cups shredded cheddar cheese
- 3 tbsp Frank's Red Hot Sauce
- Salt and pepper to taste
Instructions
- Microwave frozen cauliflower rice according to package instructions until warm.
- In a cast iron skillet, cook reserved bacon grease over medium heat; add cream cheese and hot sauce. Stir until smooth.
- Combine drained chicken, cooked cauliflower rice, mayonnaise, and one cup of shredded cheddar cheese into the skillet (or transfer to a baking dish).
- Top with remaining cheese and crumbled bacon.
- Bake at 350°F for 25-30 minutes until bubbly and golden.
