Ingredients
- 1 1/2 pounds shrimp (peeled and deveined)
- 3 tbsp butter
- Juice from 1/2 lemon
- 4 cups uncooked finely riced cauliflower
- 1 cup heavy whipping cream
- 1/4 cup chicken broth
- 1 1/2 cups shredded cheddar cheese
- 2 tsp minced garlic
- Salt and pepper
- 1 tsp blackened seasoning
Instructions
- Melt 3 tbsp butter in a skillet over medium-high heat. Season shrimp with blackened seasoning, salt, and pepper. Sear shrimp until pink and opaque; add minced garlic during the last minute. Set aside.
- In another pot, melt 2 tbsp butter, then add minced garlic and riced cauliflower. Stir in chicken broth and heavy cream; simmer until creamy. Season with salt and pepper before mixing in cheddar cheese.
- Serve the cheesy cauliflower grits topped with shrimp, garnished with green onions.
