Ingredients
- 8 oz high-protein or whole wheat pasta
- 2 chicken breasts, cut in half lengthwise
- Salt & pepper, to taste
- 1 head broccoli, chopped
- 3/4 cup shredded cheddar cheese
- 3/4 cup plain Greek yogurt
- 1 packet ranch seasoning
- 3 tbsp mayonnaise
Instructions
- Cook pasta according to package instructions. Add chopped broccoli in the last 2–3 minutes.
- Season chicken cutlets with salt and pepper; pan-sear or bake until golden brown. Slice into strips.
- Cook chicken until cooked through; crumble into bite-sized pieces.
- In a bowl, whisk together Greek yogurt, ranch seasoning, and mayo.
- Combine cooked pasta, chicken strips, broccoli, crumbled chicken, and shredded cheese in a large bowl; toss with ranch sauce.
- Store in airtight containers in the fridge for up to four days.
