- 4–5 cloves garlic (minced)
- 1 cup chicken broth
- 1 large lemon (zest and juice)
- ½ cup parmesan cheese (finely grated)
- 2 large zucchini (spiralized)
Instructions
- Prepare the zoodles by washing and spiralizing the zucchini into noodles.
- Coat the chicken pieces in a mixture of gluten-free flour, Italian seasoning, salt, and pepper.
- In a skillet over medium heat, sauté the coated chicken in olive oil until golden brown, then set aside.
- In the same skillet, cook shallots and garlic until fragrant, then add chicken broth and lemon juice/zest.
- Stir in cooked chicken and simmer for a few minutes.
- Add parmesan cheese to create a creamy sauce, then toss in zoodles for a quick cook before serving.
