- 2½ cups all-purpose flour
- ⅓ cup light brown sugar
- 2 tbsp instant espresso powder
- ½ tsp salt
- 2 tsp baking powder
- ½ tsp baking soda
- ½ cup unsalted butter (cold)
- ¾ cup mini semi-sweet chocolate chips
- 1 cup heavy whipping cream (cold)
- 1 tsp pure vanilla extract
- 1 large egg
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, brown sugar, espresso powder, salt, baking powder, and baking soda.
- Cut the cold butter into the dry mixture until it resembles coarse crumbs. Stir in chocolate chips.
- In another bowl, whisk together heavy cream and vanilla extract. Gradually add to the dry ingredients until just combined.
- Turn the dough onto a floured surface and gently shape it into an 8-inch circle. Cut into eight triangles and chill for 30 minutes.
- Bake for 20-25 minutes until golden brown. Allow cooling on a wire rack before drizzling with glaze made from powdered sugar, espresso powder, brewed coffee, and cream.
