- 1 cup all-purpose flour
- 2/3 cup cocoa powder
- 10 tablespoons unsalted butter
- 3/4 cup brown sugar
- 1 large egg
- 3/4 cup chocolate chips
- 1 cup raspberries (fresh or frozen)
- 6 tablespoons unsalted butter (for frosting)
- 1 oz cream cheese
- Powdered sugar
Instructions
- Preheat oven to 350°F (175°C). In one bowl, whisk flour, cocoa powder, baking soda, and salt. In another bowl, beat softened butter with sugars until fluffy. Add egg and vanilla; mix well.
- Gradually fold in dry ingredients until combined, then stir in chocolate chips.
- Scoop tablespoon-sized dough balls onto lined baking sheets and bake for about 8 minutes. Allow cooling on racks.
- For frosting, beat softened butter and cream cheese until smooth; add powdered sugar gradually, then gently fold in raspberries.
- Once cookies are cool, spread frosting between two cookies to create sandwiches.
