Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup vegetable oil
- 8 oz mascarpone cheese
- 1/4 cup strong coffee
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking powder, and sugar.
- In another bowl, mix eggs, milk, and vegetable oil until smooth.
- Combine wet and dry mixtures gently without overmixing.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes until springy.
- While cooling, whip mascarpone cheese with coffee until smooth.
- Once cooled, fill each cupcake with the mascarpone mixture and dust with cocoa powder.
