- 4 pounds boneless beef chuck roast
- 4 tbsp taco seasoning
- Kosher salt and freshly cracked black pepper
- 2 onions (quartered)
- ½ cup orange juice
- ½ cup beef stock
- Small flour tortillas
- Guacamole and your favorite salsa
Instructions
- Preheat the oven to 325°F (163°C). Season chuck roast generously with salt, pepper, and taco seasoning.
- In a Dutch oven, place the seasoned roast and add orange juice, beef stock, and onions. Secure the lid and bake for 3.5 to 4 hours until tender.
- Once cooked, shred the meat using two forks; return to the oven at 425°F (218°C) for an additional 15-25 minutes until crispy.
- Serve in warmed tortillas topped with guacamole and salsa.
