- 4 boneless skinless chicken breasts
- ½ cup olive oil
- 2 tablespoons Dijon mustard
- juice of 1 lime
- juice of 1 lemon
- juice of 2 oranges
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon fresh thyme (finely chopped or additional ¼ teaspoon dried herbs)
- 1 teaspoon fresh oregano (finely chopped or additional ¼ teaspoon dried herbs)
- ¼ teaspoon crushed red pepper flakes
Instructions
- Whisk together the marinade ingredients in a bowl or jar until well blended.
- Place chicken breasts in a bowl or zip-close bag, pour in most of the marinade (reserve about ¼ cup), and ensure all pieces are coated.
- Marinate in the fridge for at least an hour, or overnight for best flavor.
- Preheat your grill to medium heat and oil the grates lightly.
- Grill the marinated chicken for about 5-7 minutes on each side, brushing with reserved marinade while cooking.
- Serve hot, garnished with fresh herbs and citrus wedges.
