- 6 cups mixed salad greens (romaine lettuce, iceberg lettuce, watercress)
- 1 cup cooked chicken breast, diced
- 2 large eggs, hard-boiled and chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup blue cheese, crumbled
- 1/4 cup red onion, thinly sliced
- Salt and pepper to taste
- 1/4 cup apple cider vinegar
- 1/3 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
Instructions
- Rinse and dry the salad greens; chop into bite-sized pieces.
- In a skillet over medium heat, cook turkey bacon until crispy; drain on paper towels and crumble.
- Whisk together apple cider vinegar, olive oil, Dijon mustard, and minced garlic in a small bowl; season with salt and pepper.
- In a large bowl, layer mixed greens followed by rows of chicken, crumbled turkey bacon (or bacon alternative), chopped eggs, avocado, cherry tomatoes, blue cheese, and red onion.
- Drizzle dressing over the salad; toss gently or serve with dressing on the side.
