- 4 tbsp cold butter (cubed, for streusel topping)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
- In a bowl, whisk together the cake flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until fluffy; add in the egg and vanilla extract.
- Alternately mix in the dry ingredients with the milk until just combined; avoid overmixing.
- Gently fold in the blueberries without crushing them.
- Spread the batter evenly into the prepared baking dish.
- For the streusel topping, combine sugar, flour, cinnamon, and cubed cold butter until crumbly; sprinkle on top of the batter.
- Bake for about 35-40 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool for at least 10 minutes before serving.
