Ingredients
- 2 small shallots (diced)
- 4–5 cloves garlic (finely minced)
- 3 tablespoons vegan butter
- 30 ounces canned butter beans (with liquid)
- 1/4 cup vegan cream cheese
- 2 tablespoons lemon juice
- 1/2 tablespoon lemon zest
- 3 cups spinach
- Salt and pepper to taste
Instructions
- Finely dice shallots and mince garlic.
- In a large pot, melt vegan butter over medium heat. Sauté shallots and garlic for about 3 minutes until fragrant.
- Add both cans of butter beans with their liquid. Stir and simmer for about 5 minutes.
- Incorporate vegan cream cheese, lemon juice, and lemon zest, mixing well. Simmer for an additional 2 minutes.
- Fold in spinach until wilted, then season with salt and pepper to taste.
- Serve warm with toasted bread or alongside your favorite dishes.
