Ingredients
- 4 ears fresh corn on the cob
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp freshly squeezed lime juice
- 1 tsp chili powder
- 1/2 cup crumbled cotija cheese (or feta)
- Salt to taste
- Optional: Chopped cilantro for garnish
Instructions
- Cook the corn by boiling in salted water for about 5-7 minutes until tender.
- Transfer boiled corn to a preheated grill and grill for 10 minutes until charred.
- In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, and salt until smooth.
- Cut grilled corn off the cob and add to the dressing mixture along with cotija cheese; gently mix to combine.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
