Ingredients
- 1 pound cod fillets
- 1 1/2 tbsp Cajun seasoning
- 1/2 pound asparagus (trimmed)
- 3 tbsp olive oil (divided)
- 2 tbsp butter
- 2 tsp minced garlic
- 1/2 cup heavy whipping cream
- 3 tbsp vegetable broth
- Lemon juice (for garnish)
Instructions
- Pat the cod fillets dry and season with Cajun seasoning.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the cod for about 3-4 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, sauté trimmed asparagus until crisp-tender, about 4-5 minutes. Remove and set aside.
- Lower heat to medium, melt butter, then add minced garlic for about 30 seconds until fragrant.
- Stir in heavy whipping cream and vegetable broth; simmer until thickened (about 5 minutes).
- Return cod and asparagus to the skillet, gently coating them in the sauce; warm through for a couple of minutes.
- Serve garnished with fresh lemon juice.
