Ingredients
- 1 can (15 oz) chickpeas, rinsed and drained
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- Juice of ½ lemon
- 8 large romaine or butter lettuce leaves
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the chickpeas, olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Spread the seasoned chickpeas on the prepared baking sheet and roast for 20-25 minutes, shaking halfway through for even cooking.
- Once crispy, remove from the oven and let cool slightly. Prepare lettuce leaves on a platter.
- Fill each lettuce leaf with roasted chickpeas and drizzle with fresh lemon juice.
- Serve immediately while warm.
