- 3 lbs Bone-In Beef Short Ribs
- 3 Cups Baby Carrots
- 2 Cups Sliced Mushrooms
- 2 Cups Beef Broth
- 1 Cup Apple Vinegar (optional)
- 2 Tbsp Tomato Paste
- 3 Tbsp Unsalted Butter
- 1 Bay Leaf
- 8 Sprigs Fresh Thyme
- 1 Tbsp Minced Garlic
- Salt and Pepper to taste
Instructions
- Season short ribs generously with salt and pepper. Heat a skillet over medium heat and sear each rib until browned on all sides, about 20 seconds per side.
- Transfer the seared ribs to the crockpot. Add baby carrots, sliced mushrooms, beef broth, apple vinegar, tomato paste, butter, bay leaf, thyme sprigs, and minced garlic.
- Cover and cook on low for 8 hours until the ribs are tender.
- Once done, remove the ribs and vegetables from the crockpot. Discard any herbs but reserve the cooking liquid for serving.
