  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar for crumble topping
  • 1/4 cup all-purpose flour for crumble topping
  • 2 tablespoons cold butter for crumble topping

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In one bowl, whisk together the flour, baking soda, salt, and spices.
  3. In another bowl, mix pumpkin puree, sugars, vegetable oil, eggs, and vanilla until well combined.
  4. Gently fold the wet ingredients into the dry until just mixed; some lumps are okay.
  5. For the crumble topping, mix brown sugar and flour with cold butter until crumbly.
  6. Fill muffin cups three-quarters full with batter and top generously with crumble.
  7. Bake for 18-22 minutes or until a toothpick comes out clean. Cool before serving.
