- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar for crumble topping
- 1/4 cup all-purpose flour for crumble topping
- 2 tablespoons cold butter for crumble topping
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
- In one bowl, whisk together the flour, baking soda, salt, and spices.
- In another bowl, mix pumpkin puree, sugars, vegetable oil, eggs, and vanilla until well combined.
- Gently fold the wet ingredients into the dry until just mixed; some lumps are okay.
- For the crumble topping, mix brown sugar and flour with cold butter until crumbly.
- Fill muffin cups three-quarters full with batter and top generously with crumble.
- Bake for 18-22 minutes or until a toothpick comes out clean. Cool before serving.
