- 1.75 cups plain 2% Greek yogurt
- 4 eggs
- 2.5 cups all-purpose flour
- 0.25 cups ground flaxseed
- 1 tablespoon baking powder
- 1.5 cups chopped spinach
- 0.5 cups chives, finely diced
- 1.5 cups shredded cheddar cheese (divided)
- 2 cups cooked chicken, diced (or turkey)
- 0.5 cups sun-dried tomatoes, chopped
- 1.5 cups feta cheese
- 2 teaspoons dried basil
- 1 teaspoon garlic powder
- 0.5 teaspoon red pepper flakes
- 2 teaspoons salt
Instructions
- Preheat your oven to 400°F and line a baking tray with parchment paper.
- In a bowl, whisk together Greek yogurt and eggs until smooth.
- In another bowl, mix flour, ground flaxseed, baking powder, garlic powder, red pepper flakes, and salt.
- Gradually combine dry ingredients into the wet mixture until just blended.
- Fold in spinach, chives, half of the cheddar cheese, chicken (or turkey), sun-dried tomatoes, feta cheese, and dried basil.
- Shape the dough into 12 even disks and place on the baking tray; sprinkle with remaining cheese.
- Bake at 400°F for 5 minutes; then reduce temperature to 350°F and bake for an additional 20 minutes until golden brown.
