  • 2 pounds bone-in skin-on chicken thighs
  • 2 tablespoons dark brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon five spice powder
  • 1/4 teaspoon white pepper
  • 1 1/2 tablespoons hoisin sauce
  • 1 tablespoon apple vinegar
  • 2 teaspoons light soy sauce
  • 1/2 teaspoon sesame oil
  • 2 cloves garlic (minced)
  • 2 tablespoons water
  • 1 tablespoon maltose

Instructions

  1. In a bowl, mix dark brown sugar, salt, five spice powder, white pepper, hoisin sauce, apple vinegar, soy sauce, sesame oil, minced garlic, water, and maltose until smooth.
  2. Place chicken thighs in a resealable bag or shallow dish; pour marinade over them. Seal and refrigerate for at least 4 hours (overnight is best).
  3. Preheat oven to 375°F (190°C).
  4. Remove chicken from marinade and place on a baking tray lined with parchment paper. Bake for about 40 minutes until cooked through.
  5. Let rest for a few minutes before slicing and serving warm with side dishes of your choice.
