Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 cup freeze-dried strawberries
- 1 cup unsalted butter (room temperature)
- 1 3/4 cups granulated sugar
- 1 large egg
- 1 large yolk
- 2 teaspoons pure vanilla extract
- 2 tablespoons Dutch-process cocoa powder
- Sprinkles or granulated sugar for rolling
Instructions
- Preheat oven to 350°F (180°C) and line three baking sheets with parchment paper.
- In a bowl, mix flour, baking soda, and salt.
- Pulverize freeze-dried strawberries in a food processor until fine.
- Cream butter and sugar in a mixer until light and fluffy.
- Add egg, yolk, and vanilla; mix until combined.
- Gradually add flour mixture; mix on low speed until just combined.
- Divide dough into thirds; mix one third with strawberry powder, another with cocoa powder.
- Form small cookie balls from each colored dough; roll in sprinkles or sugar.
- Place on prepared sheets; bake for about 10–11 minutes until puffed.
- Cool on wire racks before serving.
