Ingredients
- 10 oz baby spinach
- 1 lb fresh strawberries, hulled and sliced
- 3/4 cup broken or roughly chopped pecans
- 5 oz feta cheese, crumbled
- 1/3 small red onion, thinly sliced
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil
- 1 Tbsp dijon mustard
- 1 Tbsp honey
- 1 1/2 Tbsp brown sugar
- 1/2 Tbsp butter
- Salt and freshly ground black pepper
Instructions
- Make the dressing by whisking together balsamic vinegar, olive oil, dijon mustard, honey, salt, and pepper until well combined.
- In a skillet over medium heat, melt butter and add chopped pecans with brown sugar. Toast for about 5 minutes until golden brown and fragrant.
- In a large bowl, combine baby spinach and sliced strawberries.
- Add crumbled feta cheese and thinly sliced red onion on top.
- Drizzle the dressing over the salad just before serving and toss gently to combine.
