  • 5 Stalks Celery (chopped)
  • 2 Avocados (1 halved and 1 chopped)
  • 1 Bunch Scallions (chopped)
  • ¼ Cup Sour Cream (or Greek yogurt)
  • 1 Tbsp Dijon Mustard
  • ½ Cup Parsley Leaves
  • ¼ Cup Lemon Juice
  • 1 tsp Lemon Zest
  • Salt and freshly ground black pepper

Instructions

  1. Chop the rotisserie chicken into bite-sized pieces.
  2. Wash and chop the celery into 1-inch pieces; chop one avocado and squeeze lemon juice over it to prevent browning.
  3. In a large bowl, combine the chicken, celery, avocado, and scallions.
  4. Blend the remaining avocado with sour cream, mustard, parsley, lemon juice, and zest until creamy.
  5. Pour the dressing over the salad mixture; season with salt and pepper before gently tossing to combine.
  6. Garnish with extra parsley before serving.
