- 1 Meat of Rotisserie Chicken (chopped)
- 5 Stalks Celery (chopped)
- 2 Avocados (1 halved and 1 chopped)
- 1 Bunch Scallions (chopped)
- ¼ Cup Sour Cream (or Greek yogurt)
- 1 Tbsp Dijon Mustard
- ½ Cup Parsley Leaves
- ¼ Cup Lemon Juice
- 1 tsp Lemon Zest
- Salt and freshly ground black pepper
Instructions
- Chop the rotisserie chicken into bite-sized pieces.
- Wash and chop the celery into 1-inch pieces; chop one avocado and squeeze lemon juice over it to prevent browning.
- In a large bowl, combine the chicken, celery, avocado, and scallions.
- Blend the remaining avocado with sour cream, mustard, parsley, lemon juice, and zest until creamy.
- Pour the dressing over the salad mixture; season with salt and pepper before gently tossing to combine.
- Garnish with extra parsley before serving.
