- 4 ounces cream cheese (cubed)
- 1 tablespoon sugar
- 1/2 teaspoon instant coffee granules
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2–1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 cup milk
- 1/2 cup butter (melted)
- 1 large egg
- 3/4 cup miniature semisweet chocolate chips
Instructions
- Prepare the cream cheese spread by mixing cream cheese, sugar, instant coffee granules, and vanilla extract until smooth.
- Preheat the oven to 375°F (190°C) and line a muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, combine milk, melted butter, egg, and vanilla extract; stir in instant coffee granules.
- Pour wet ingredients into dry ingredients; mix until just combined. Fold in chocolate chips.
- Fill muffin cups about two-thirds full with batter and top each with cream cheese spread.
- Bake for about 20 minutes or until golden brown and a toothpick comes out clean.
