- 1.5 lbs boneless skinless chicken thighs
- 3 tbsp fresh lime juice (about 2 limes)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- ½ tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 8–12 corn tortillas (small size)
- ½ cup white onion (finely chopped)
- ½ cup fresh cilantro (chopped)
- Cotija cheese (optional)
- Avocado slices (optional)
- Salsa verde (optional)
- Pickled red onions (optional)
Instructions
- Marinate the Chicken: Mix lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and black pepper in a bowl. Add chicken thighs and coat well. Marinate for at least 30 minutes.
- Grill the Chicken: Preheat grill or skillet over medium-high heat. Grill chicken for about 6-7 minutes on each side until cooked through. Let rest before slicing.
- Warm Tortillas: Heat corn tortillas in a dry skillet for about 30 seconds on each side until soft.
- Assemble Tacos: Place sliced chicken on warm tortillas and top with chopped onion, cilantro, and any additional toppings you prefer. Serve with lime wedges.
