- 12 eggs
- 16 ounces cottage cheese
- 12 ounces chicken sausage
- 2 cups baby spinach
- 1 cup diced yellow onion
- 3/4 cup red bell pepper
- 3/4 cup green bell pepper
- 1/2 cup milk
- 1/3 cup all-purpose flour
- 1 1/2 cups shredded cheddar cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking dish with nonstick spray.
- In a skillet over medium heat, sauté olive oil with bell peppers and onion for 5-7 minutes until softened.
- Add minced garlic and spinach; cook until spinach wilts (about 2-3 minutes).
- Transfer the veggies to a bowl to cool while cooking the chicken sausage in the same skillet until browned.
- In a large bowl, whisk together eggs, cottage cheese, milk, flour, salt, and pepper.
- Fold in cooked sausage, cooled veggies, and one cup of cheddar cheese.
- Pour mixture into the prepared baking dish; top with remaining cheese.
- Cover with foil and bake for 30 minutes; then uncover and bake for an additional 20-25 minutes until golden.
