  • 2 cups baby spinach
  • 1 cup diced yellow onion
  • 3/4 cup red bell pepper
  • 3/4 cup green bell pepper
  • 1/2 cup milk
  • 1/3 cup all-purpose flour
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté olive oil with bell peppers and onion for 5-7 minutes until softened.
  3. Add minced garlic and spinach; cook until spinach wilts (about 2-3 minutes).
