Ingredients
- 1/2 cup butter
- 1.25 cups granulated sugar
- 4 large eggs
- 1/2 cup oil
- 1/2 cup lemon juice
- 3/4 cup milk
- 2.5 cups all-purpose flour
- 2 tsp baking powder
- 2 tbsp fresh lemon zest
- 2 tbsp poppy seeds
Instructions
- Preheat oven to 170°C (340°F) and line two springform pans with parchment paper.
- In a large bowl, cream together butter and sugar until smooth. Gradually add eggs and vanilla extract.
- Mix in oil, milk, and lemon juice until well combined.
- In a separate bowl, sift together flour, baking powder, and salt; fold into wet mixture until just combined.
- Stir in poppy seeds and lemon zest.
- Divide batter between pans and bake for 25-27 minutes or until a toothpick comes out clean.
- Allow cakes to cool completely before removing from pans.
