- 4 fresh salmon fillets
- 2 tablespoons olive oil (divided)
- 1 cup broccoli florets
- 1 cup zucchini slices
- 1 cup bell peppers (any color, sliced)
- 1/2 cup baby carrots
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Lemon wedges
- Fresh parsley or dill for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Rub salmon fillets with a mixture of 2 tablespoons olive oil, garlic powder, paprika, salt, and pepper.
- Toss broccoli florets, zucchini slices, bell peppers, and baby carrots in the remaining olive oil along with Italian seasoning, red pepper flakes (if using), salt, and pepper.
- Arrange the salmon among the veggies on a sheet pan.
- Roast for about 20 minutes until the salmon is flaky and vegetables are tender.
- Serve hot with lemon wedges and sprinkle with fresh parsley or dill.
