Ingredients
- 12 large eggs
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1/4 cup crumbled cotija cheese
- 2 tablespoons finely diced red onion
- 2 tablespoons chipotle mayo (mayonnaise mixed with chipotle peppers)
Instructions
- Boil the eggs in a saucepan covered with cold water. Bring to a boil, then simmer for 10-12 minutes.
- Cool the eggs under cold water, peel them, and slice them in half lengthwise.
- Scoop out yolks into a bowl and mash until smooth. Mix in mayonnaise, sour cream, cilantro, lime juice, chili powder, garlic powder, salt, and pepper until well combined.
- Fill egg whites with yolk mixture generously using a spoon or piping bag.
- Top each egg with crumbled cotija cheese, diced red onion, and drizzle with chipotle mayo.
- Garnish with paprika before serving.
