- 1 large spaghetti squash
- 1 8-ounce block feta cheese
- 1 cup cherry tomatoes (halved)
- 4 tablespoons olive oil
- 2 cloves garlic (minced)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup fresh basil (chopped)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place each half cut side up on a baking sheet.
- Break the feta block into two halves and place them in the center of each squash half, scattering cherry tomatoes around.
- Drizzle olive oil over everything, then sprinkle with minced garlic, salt, and black pepper.
- Bake for about 45-50 minutes until golden brown and fork-tender.
- Using a fork, fluff the strands of squash, mixing everything together before serving with fresh basil on top.
