- 3 large eggs (separated)

- ½ teaspoon lemon zest (optional)
- ½ cup fresh blueberries
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Drain excess liquid from cottage cheese and blend until smooth.
- In a clean bowl, beat egg whites with cream of tartar until stiff peaks form.
- In another bowl, whisk together egg yolks, cottage cheese, vanilla extract, lemon zest, sweetener (if using), and cornstarch until combined.
- Gently fold the yolk mixture into the whipped egg whites.
- Fold in fresh blueberries carefully to avoid deflating the batter.
- Scoop batter onto prepared baking sheet in portions spaced two inches apart.
- Bake for 25-30 minutes until golden brown and firm.
- Allow cooling before serving.
