- 3 tablespoons olive oil
- 4 large sweet onions, thinly sliced
- 3 tablespoons unsalted butter
- ¼ cup all-purpose flour
- 2 ½ cups milk
- 12 ounces gruyere cheese, freshly grated
- 4 ounces parmesan cheese, freshly grated
- 1 pound short cut pasta, cooked
- ⅓ cup seasoned bread crumbs
Instructions
- Heat olive oil in a large skillet over medium heat. Add onions with salt and cook slowly for about 60-90 minutes until golden brown.
- During the onion cooking time, preheat your oven to 375°F (190°C) and cook pasta according to package instructions.
- In the same skillet used for onions, melt butter over medium heat. Whisk in flour to create a roux. Gradually add milk while stirring until thickened. Stir in most of the cheeses until melted.
- Mix in caramelized onions and cooked pasta until evenly coated.
- Transfer to an oven-safe dish, top with remaining cheese and bread crumbs, then bake for 25-30 minutes until golden brown.
- Garnish with fresh thyme before enjoying.
