  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 ½ cups milk
  • 12 ounces gruyere cheese, freshly grated
  • 4 ounces parmesan cheese, freshly grated
  • 1 pound short cut pasta, cooked
  • ⅓ cup seasoned bread crumbs

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions with salt and cook slowly for about 60-90 minutes until golden brown.
  2. During the onion cooking time, preheat your oven to 375°F (190°C) and cook pasta according to package instructions.
  3. In the same skillet used for onions, melt butter over medium heat. Whisk in flour to create a roux. Gradually add milk while stirring until thickened. Stir in most of the cheeses until melted.
  4. Mix in caramelized onions and cooked pasta until evenly coated.
  5. Transfer to an oven-safe dish, top with remaining cheese and bread crumbs, then bake for 25-30 minutes until golden brown.
  6. Garnish with fresh thyme before enjoying.
