  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cups oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter (melted)
  • 1 tbsp oat flour
  • 2 tbsp white sugar
  • 1/2 tbsp cinnamon
  • 1/4 cup salted butter (slightly softened)
  • 1/4 cup light brown sugar
  • 1/4 cup almond flour
  • 1/2 cup oat flour
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine softened butter, applesauce, eggs, sugar, and vanilla until smooth.
  3. Mix in almond flour, oat flour, baking powder, and salt until fully incorporated.
  4. In another bowl, mix melted butter with oat flour, sugar, and cinnamon for the filling.
  5. For the streusel topping, combine brown sugar, almond flour, oat flour, and cinnamon with room temperature butter until crumbly.
  6. Grease an 8×8 baking dish and pour half the batter inside. Add half of the cinnamon filling and swirl gently. Repeat with remaining batter and filling.
  7. Bake for 25 minutes; then add streusel topping and bake for an additional 18 minutes until golden brown.
  8. Allow cooling before slicing into squares.
