- 1 pound flank steak (or strip steak)
- 3 tablespoons olive oil
- 3 tablespoons apple cider vinegar
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- 4 large pita bread
- 1 cup fresh tomatoes, diced
- 1 cup cucumber, chopped
- 1 small red onion, thinly sliced
Instructions
- In a bowl, combine olive oil, apple cider vinegar, minced garlic, oregano, cumin, salt, and pepper to create the marinade.
- Coat the flank steak evenly with the marinade and refrigerate for at least 30 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Grill the marinated steak for about 4-5 minutes on each side until cooked to your preference.
- Allow the steak to rest for 5-10 minutes before slicing thinly against the grain.
- Mix Greek yogurt, lemon juice, chopped dill, and salt to make tzatziki sauce.
- Warm pita bread on the grill for a couple of minutes.
- Assemble gyros by layering sliced steak with diced tomatoes, cucumber, red onion, and tzatziki sauce in each pita.
