- 1 cup cooked brown rice
- 1 tablespoon lime juice
- 2 cups mixed greens
- ½ cup black beans
- ½ cup canned corn (drained)
- ⅓ cup cherry tomatoes (quartered)
- 2 tablespoons Greek yogurt
- ½ red onion (diced)
- 1 jalapeno pepper (sliced)
- A small handful of chopped cilantro (plus more to garnish)
Instructions
- Marinate the chicken by mixing olive oil, fresh lime juice, and spices in a ziplock bag. Add chicken breasts and coat evenly.
- Grill the chicken on medium-high heat for 5-7 minutes per side until fully cooked. Let rest before slicing.
- Combine cooked brown rice with lime juice and chopped cilantro.
- Assemble your bowls with mixed greens as the base, topped with sliced chicken, rice, black beans, corn, tomatoes, yogurt dollops, diced onions, jalapeños, and garnish with cilantro.
