- 1.5 pounds boneless skinless chicken breasts

- 1 pound cherry tomatoes
- 6 ounces fresh mozzarella pearls
- Fresh basil leaves
- 2 pounds zucchini
Instructions
- Marinate the chicken: In a glass container, combine chicken breasts with olive oil, balsamic vinegar, maple syrup, and sea salt. Mix well, cover tightly, and marinate for at least 2 hours or overnight.
- Preheat the grill: Heat your grill to medium-high (about 400ºF).
- Prepare the Caprese salad topping: In a bowl, mix halved cherry tomatoes and mozzarella pearls with olive oil. Chiffonade the basil leaves and add them to the mixture.
- Grill the chicken: Place marinated chicken on the grill, cooking each side for about 8-10 minutes until fully cooked (internal temperature should reach 165ºF).
- Serve: Allow the chicken to rest before slicing. Top with the Caprese salad mixture and drizzle with balsamic reduction.
