  • 1 cup cherry tomatoes, halved

  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat your grill to medium heat.
  2. In a bowl, combine zucchini, red bell pepper, and red onion with olive oil, salt, pepper, oregano, and basil; toss to coat.
