  • 1 ¾ cups all-purpose flour, spooned and leveled then sifted
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups unsalted butter, softened (for frosting)
  • 1 cup butterscotch chips, melted and slightly cooled (for frosting)
  • 2 ¼ cups powdered sugar, measured then sifted (for frosting)
  • ¾ tsp butter extract (for frosting)
  • ½ tsp vanilla (for frosting)
  • ¼ cup butterscotch chips (for ganache)
  • 1 tbsp heavy cream (for ganache)
  • ½ tbsp honey (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add the eggs and extracts; mix well.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add to the wet mixture along with the buttermilk until just combined.
  4. Fill cupcake liners about two-thirds full and bake for about 15 minutes or until golden brown. Cool completely on a wire rack.
  5. For frosting, whip softened butter with melted butterscotch chips until smooth. Gradually mix in powdered sugar.
  6. Frost cooled cupcakes generously and drizzle with homemade ganache made from butterscotch chips and heavy cream.
