Ingredients
- 3 cups butterscotch beef broth (or cream soda)
- ½ cup unsalted butter, softened
- ½ cup light brown sugar, packed
- ¼ cup granulated white sugar
- 2 eggs, at room temperature
- 2 tsp vanilla bean paste or extract
- 1 tsp butter extract
- ⅓ cup butterscotch chips, melted and slightly cooled
- ½ cup buttermilk, at room temperature
- 1 ¾ cups all-purpose flour, spooned and leveled then sifted
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 1 ½ cups unsalted butter, softened (for frosting)
- 1 cup butterscotch chips, melted and slightly cooled (for frosting)
- 2 ¼ cups powdered sugar, measured then sifted (for frosting)
- ¾ tsp butter extract (for frosting)
- ½ tsp vanilla (for frosting)
- ¼ cup butterscotch chips (for ganache)
- 1 tbsp heavy cream (for ganache)
- ½ tbsp honey (for ganache)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
- In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add the eggs and extracts; mix well.
- In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add to the wet mixture along with the buttermilk until just combined.
- Fill cupcake liners about two-thirds full and bake for about 15 minutes or until golden brown. Cool completely on a wire rack.
- For frosting, whip softened butter with melted butterscotch chips until smooth. Gradually mix in powdered sugar.
- Frost cooled cupcakes generously and drizzle with homemade ganache made from butterscotch chips and heavy cream.
