Ingredients
- 1 Tablespoon olive oil
- 1 pound boneless skinless chicken breasts, cut into bite-size pieces
- Salt and freshly ground black pepper
- 1/2 cup barbecue sauce
- 2/3 cup pineapple, chopped
- 1/4 red onion, chopped
- 1 romaine heart, chopped
- 1/4 cup fresh cilantro, chopped
- 4 large flour tortillas
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Sauté until golden brown and cooked through, about 5-7 minutes.
- Remove from heat and stir in BBQ sauce until chicken is well-coated.
- On each tortilla, layer BBQ chicken, cheese (if using), pineapple, onion, romaine, and cilantro.
- Roll up each tortilla burrito-style, securing with a toothpick if needed.
- Serve immediately or store for later enjoyment.
