  • Saltine crackers
  • 1/2 tsp vanilla extract
  • 1/4 cup almond milk
  • 1/4 cup peanut butter
  • 1/2 cup coconut sugar
  • 3 tbsp coconut oil
  • 1 cup dark chocolate chips
  • 1/4 cup chopped peanuts

Instructions

  1. Preheat oven to 350°F.
  2. Line a baking tray with parchment paper and spread saltine crackers evenly.
  3. In a saucepan, combine peanut butter, almond milk, coconut sugar, coconut oil, and vanilla extract over medium heat until simmering.
  4. Pour the mixture over the crackers and spread evenly.
  5. Bake for 3 minutes then remove and sprinkle dark chocolate chips on top.
  6. Return to oven for 30 seconds to soften chocolate; spread evenly.
  7. Top with chopped peanuts and let cool at room temperature before refrigerating until hardened.
