Ingredients
- Saltine crackers
- 1/2 tsp vanilla extract
- 1/4 cup almond milk
- 1/4 cup peanut butter
- 1/2 cup coconut sugar
- 3 tbsp coconut oil
- 1 cup dark chocolate chips
- 1/4 cup chopped peanuts
Instructions
- Preheat oven to 350°F.
- Line a baking tray with parchment paper and spread saltine crackers evenly.
- In a saucepan, combine peanut butter, almond milk, coconut sugar, coconut oil, and vanilla extract over medium heat until simmering.
- Pour the mixture over the crackers and spread evenly.
- Bake for 3 minutes then remove and sprinkle dark chocolate chips on top.
- Return to oven for 30 seconds to soften chocolate; spread evenly.
- Top with chopped peanuts and let cool at room temperature before refrigerating until hardened.
- Cut into squares and enjoy!
